During his apprenticeship at Laperousse and Lucas – Carton, Gerard learned his trade by preparing the hors d’oeuvres for the receptions of General de Gaulle. While working at the Plaza – Athénée, Vié punctually prepared the meals for the official presidential trains, as well as the inaugural trips of General de Gaulle, and later, President Georges Pompidou.
In 1970, Gerard opened Les Trois Marches in Versailles. After only three years, he was rated 17 out of 20 by Gault & Millau Guide, and rated Two Stars by Michelin.
In 1976, Chef Vié received the President Valery Giscard d’Estaing, and became the official Chef of all the heads of state who visit Versailles.
