Since September 2000 Sam is the Director of kitchens for the Tung Lok Group Restaurants. He not only oversees their day to day operation but he was also responsible for the opening of seven restaurants in Singapore and China.
Previously Sam was the Chinese Executive Chef for six years at the Four Season Hotel in Singapore.
